Consultants often don't know what to eat instead of bread, butter and jam. And sometimes, a salty breakfast with cheese or eggs can be tiring or even disgusting.
I discovered this keto cake through trial and error in the kitchen.
It's a cake you can make in a food processor (it's my version of when I'm in a hurry). It lends itself so well to an upside-down cake too. Just double the doses and the result is so good. For a softer texture, simply whip the egg whites until stiff or add the mix gom (bought at the organic store) to the batter in the food processor.
Honestly, it can be made with 100% almond flour and looks like a shortbread.
I've tried everything, and I never miss it.

ANDREA KETO CAKE
Ingredients
- 150 g wholemeal almond powder
- 50 g rice flour
- 1 tablespoon cassava starch
- 2 eggs
- 50 g coconut/apple/pear sugar
- 1 tsp mix gom (optional)
- 10 cl coconut milk or other vegetable milk
- 80 cl coconut oil or olive oil
- 1 sachet gluten-free baking powder
Instructions
- Preheat oven to 180°C.
- Place all ingredients, except egg whites, together in a food processor. Blend for 1 minute.
- Beat the egg whites until stiff with a pinch of salt, then fold them gently into the dough by hand.
- Butter a cake tin and pour in the pastry. On top, add either dates, apples or pears in large slices and arrange them on the pastry. Dates should be avoided if you have pre-diabetes. It's better to think about fruit.
- Bake for 20 to 40 minutes or until cake is cooked. (My oven bakes this cake in 20 minutes). Insert the blade of a knife to check for doneness.
- Turn out onto a wire rack.

*This cake can be made with buckwheat flour instead of rice.
** When I use fruit, I don't put sugar in the batter
*** For the kids, I make it with half-cut dates, which I add to the batter poured into the tin.
****Avoid adding sugar, as the fruit gives enough flavour and the whole almond powder is already sweetened on its own.
